About the Role
CJs’ Restaurants is recruiting a Baker for its Nairobi location. This is a full-time position within the catering and confectionery sector, based at one of the group’s three Nairobi outlets. The Baker will be responsible for producing signature breads, pastries, and baked goods that form a core part of CJs’ Restaurants’ extensive menu of over 300 items. You’ll work in a professional bakery environment where quality, food safety, and consistency are non-negotiable.
CJs’ Restaurants operates 12 locations across East Africa—3 in Nairobi, 8 in Kampala, and 1 in Entebbe—each offering a carefully curated dining experience. The group places significant emphasis on maintaining high service standards and product excellence across all operations. As Baker at CJs’ Restaurants, you will be a key member of the kitchen team, ensuring that all baked items meet company standards and customer expectations daily.
Key Responsibilities
- Mix, shape, and bake a range of signature breads and pastries including kita bread, health bread, Portuguese bread, rolls, and croissants according to recipe specifications and production schedules.
- Oversee the finishing, glazing, and application of decorative details on all baked products to ensure consistency and visual appeal.
- Supervise and coordinate the bakery team, delegating tasks and maintaining workflow efficiency throughout production shifts.
- Enforce strict hygiene, food safety, and HACCP compliance protocols across all bakery operations and workstations.
- Manage bakery inventory, including monitoring stock levels of ingredients, flour, and supplies, and flagging reorder requirements.
- Conduct routine maintenance checks on bakery equipment and report faults or maintenance needs promptly to management.
- Maintain a clean, organized, and sanitary bakery workspace that meets company and regulatory standards at all times.
Requirements & Qualifications
- Bachelor’s degree, Higher National Diploma (HND), or equivalent qualification in hospitality, catering, or food science (or equivalent professional experience).
- Minimum 3 years of hands-on experience working as a Baker or in a pastry production environment.
- Current Baking or Pastry Certificate or formal qualification demonstrating technical competence in baking techniques.
- Demonstrated proficiency in a diverse range of pastry and bread-making techniques, including lamination, fermentation, and shaping.
- Solid understanding of food hygiene, HACCP principles, and workplace safety regulations.
- Ability to work independently and as part of a team, with a creative approach to problem-solving and process improvement.
